WINE CLUB SELECTION JAN 2024
We love the clean and unique cuvees of Slovenia's Keltis!
sourced from 5 hectares
vines are 14-25 years, and the marl/clay/sandstone soil provides intense minerality, refreshing, bone dry, another one of those pet nats that is decidedly champagne-esque, tiny persistent bead, wildflowers, yellow fruit, peeled apples, freshly baked bread, has a dry cider vibe to it.
Bizeljsko is in far eastern Slovenia, near the Croatia border
region: Bizeljsko, Slovenia
varietal: 80% Chardonnay 20% Rumeni Plavec
style: sparkling (pet nat)
farming/cellar: everything by hand, very small production, biodynamic & organic farming, use their own cattle compost, directly pressed grapes, ambient yeast, aged on lees with battonage, unfiltered, unfined, no added so2
pairing: great brunch wine
