In Catalonia, a region where primary fruit aromas and flavors are prized, this estate focuses on secondary aromas and flavors such as tobacco, smoke, and spices. They do not pressure wash their barrels but instead use a less invasive technique - burning a sulfur candle in the old French barrels leaving a “library of info, of the cellar” in the barrel.
