From a tremendously talented vigneron who left us far too soon; Stéphane Moreau’s last vintage was 2016. His wife and assistant winemaker are carrying on his tradition of crafting superb, elevated Chablis.
Full organic farming with biodynamic principles, natural yeast ferments, and harvested 100% by hand–an anomaly in the mainly conventionally-farmed area. Unmistakably Chablis.
Crushed rocks and oyster shells, hints of cream and toasty brioche, bright citrus. A slightly richer, rounder style of Chablis that is delicious now but can also be cellared for several more years.
region: Chablis, France
varietal: Chardonnay
style: mineral driven age-worthy white
farming/cellar: organic farming, biodynamic practices, hand harvested, ambient yeast, matured in combo of steel and oak (with a small percentage of new oak)
pairing: A match made in heaven with lobster and drawn butter.
