It doesn't get any more traditional than the winemaking of Gaioz from western Georgia. Crafted entirely outdoors in the elements with just manual presses and a few buried clay amphorae (qvevri). Stem and skin contact is a focus, and no additives are used whatsoever.

A wild, rustic red dense mountain currants and dark fruits, a carbonic quality (pomegranate seeds), lots of iron-y mineral notes, pinecones, calcerous, chalky dry finish, and spice.
