Protector Cellars is Alex Katz, a Manhattanite who makes wine in Santa Barbara, mentors were Au Bon Climat's Jim Clendenen and Qupe's Bob Linquist.
CLIMATE POSITIVE means that we go beyond carbon neutral, and actually have a net positive effect on the environment by pulling more greenhouse gases out of the atmosphere than we put in.

farming/cellar: certified sustainable, carbon neutral, canned the wine before primary fermentation was fully complete, allowing it to finish in the can and create a natural sparkle.
