Certified Organic. 100% Pinot Noir, entirely taken from the vintage 2020. Sourced from the vineyard sites in Chervey from which the fruit for the Françoise Martinot / Bistrøtage line is always taken. Soils are calcareous clay in the Vallée de l’Arce (Côte des Bar). Indigenous yeast ferment of the vin clair, malolactic fermentation completes, followed by one year’s aging on lees in a split of 50% barrels and 50% tanks. Bottled with liqueur de tirage in November of 2022; disgorged June 2025. Extra brut; <2g/L dosage, no SO2 added.
