We sourced grapes from three different Central Coast Chenin Blanc vineyards  Chalone, Jurassic Park, and Shell Creek. All three of these vineyards are harvested and brought to the winery to be pressed immediately before fermenting with spontaneous yeast. Fermented in a mix of 1000L German Oak Fuders, and 225L barriques. This old vine cuvee is a true snapshot of a lost era of California Viticulture.

In Santa Ynez, the Jurassic Park Vineyard sits at 335m elevation on sandy, well-drained limestone-laden soils atop the playground of the dinosaurs of the Jurassic era. These days, pumpjacks swing wildly all around the perimeter of the vineyard, pumping black gold from deep underground and funding adult playgrounds in Beverly Hills. Our bounty is perhaps less remunerative, but no less precious. Planted in 1978, the age of this ungrafted Chenin vineyard qualifies it as "old" in Southern California. We treat it gently, ferment it with native yeasts, and keep it company through the winter. Each vintage shows us a new dimension, a new potential expression of this place with botrytis occasionally making an appearance. Consistently small berries and clusters and low vigor soils lend depth, dimension, and structure to this noblest of varieties

Perched in the remote Gavilan Mountain range, 1,800 feet above California’s Salinas Valley, this rugged vineyard sits at the base of an extinct volcano bordering the Pinnacles National Park. Chalone Vineyard is one of the few wineries in the U.S. growing grapes in limestone-based soils, the same as in Burgundy. The spare, well-drained ground, limited rainfall, and low crop levels attracted Dick Graff, who wanted to make top-flight Burgundian-styled Chardonnay. Graff made his first vintage under the Chalone Vineyard label in 1966, producing what became a benchmark for California Chardonnay. 

the oldest producing vineyard in Monterey County since 1919, and 3rd place Chardonnay winner in the legendary 1976 Judgement of Paris.

Shell Creek Vineyard is located 20 miles from the town of Paso Robles. The name of the now 120 acre vineyard comes from a seasonal creek that runs through the property, carrying small pieces of fossilized shells that are found further upstream on the ranch and underneath the sandy top soil. The vineyard was planted in 1972 by the fifth generation of the Sinton Family, who have owned the property and stewarded the land for six generations since the late 1800s. The vineyard is farmed without the use of pesticides, herbicides or synthetic fertilizers and is in the process of getting its organic certification.
