En Cavale - Vermentino "Four Diamonds Vineyard" Oregon 2023 750ml (13% ABV)

Italy via Oregon fruit & Cali winemaking! A dry & very classic expression of this varietal, with aromas of toasted almonds, nice body, and a mineral-infused finish. A fun alternative to elegant Chardonnay.

Certified Organic vineyard planted on a pebbly bend in the Applegate River.

Gentle tread by foot and soaked prior to pressing;. No inoculations or additions apart from minimally effective SO2.

fruit sourced from a single plot in Oregon's Applegate Valley, wine made in En Cavale facility in Etna, Cali.

Picked in early September and pressed to ferment in plastic tanks. Racked off the gross lees; elevage in two tanks again for 10 months; both tanks homogenized and rested for another month . Bottled in late September/early October.

En Cavale is a collaboration between our good friends and colleagues (and also both at one point our entire Bay Area sales operation), Wolfgang Weber and Chad Hinds (Iruai). Their idea was to team up and make soulful, yet accessible expressions of old-school Californian wine with a hat tip to many of their favorite wines from France and Italy. All of the fruit is sourced from organically-farmed vineyards and extreme care is practiced in the cellar with native yeasts carrying out fermentations, sulfur additions kept to a minimum (if any are made at all), and no filtration.
