Grapes are crushed by foot and spontaneously fermented with whole clusters. The wines are then basket-pressed and allowed to rest for a day or so before being moved by gravity into neutral barrels. The wines are bottled unfiltered and unfined with only the smallest amount of SO2 added before bottling.

The energy of whole cluster is strong with this truly Burgundian-style Pinot. The nose gives aromas of earthy sage, Darjeeling tea, and cherry skin, while the palate displays spicy Bing cherry, clove and orange peel flavors in a middle weight, but richly tannic frame. The finish morphs into a lingering whisper of pithy orange peel. Perfect for roasted gamebirds or richer pork dishes.
