Appellation: Vin de France
Location: The village of Molesme is located just 20km south of the border of the Côte des Bar, in the Côte d’Or region of Burgundy.
Variety: Pinot Noir
Viticulture: From 0.5ha in a vineyard called ‘La Grande Côte,’ planted on Oxfordian red marl at 400m elevation. Farming is organic.
Vinification: Grapes are hand-harvested, then crushed into used barrels for a 6hr maceration, followed by native yeast fermentation. The wine is then aged sur lie for 2 years in enamelled steel tank, with no fining or filtering. Small dose of SO2 used just after harvest. Secondary fermentation in bottle, then disgorged with no dosage.
