Grape: 47% Chardonnay, 47% Meunier, 6% Pinot Noir

Soil / Terroir: Clay-Limestone soils, north-facing vins in Chavot. 

Vinification: 100% in thermo-regulated stainless steel vats. No use of added sulphites, settling is done without enzymes, tannin, coal, or chaptalisation. Spontaneous alcoholic fermentation (indigenous yeast) at 17°C and spontaneous malolactic fermentation (indigenous bacteria) at 20°C. No fining, acidification, or deacidification before bottling. •

Ageing: Stainless steel vats, then in bottles

Champagne Chavost is a cooperative winery in the village of Chavot, currently led by the young and dynamic chef de caves Fabian Daviaux, who took over in 2019 at the young age of 30. Founded in 1946 by an original group of around 20 growers, the co-op is now comprised of the holdings of over 70 multi-generational growers.

Champagne is often seen as one of the French wine regions most resistant to change. Champagne Chavost is a historic winery undertaking a revolutionary project of reinvention, and is very much pushing the envelope about what is possible in Champagne today. The intention is not to go against the past simply for the sake of it, but to better honor the past generations who farmed this hillside with a true and honest reflection of its unique terroir.
