BXT, Manley Vineyard Blanc de Blanc California Sparkling Wine 2022

Located in Sonoma-Carneros, just a stone’s throw away from downtown Sonoma, Manley Vineyard sits on a mix of sandy loam and clay soils. Since 2019, the site has been organically hand-farmed by myself. The fruit was hand-picked on August 15th, 2022. Grapes were then gently pressed (this bottling is 80 gallons per ton), oxidatively handled, and fermented with native yeasts in large-format French oak barrels. Malo-lactic fermentation was inhibited. The wine was assembled and hand-bottled in February of 2021, achieving 6 atmospheres of pressure without fining or filtration. After 36 months on lees, the bottles were hand-riddled and disgorged with no dosage.
