Appellation: AOC Touraine
Location: Thésée, on the right bank of the river Cher, between Montrichard and Saint Aignan. Thésée is located in Touraine, in the Loire Valley region.
Variety: Sauvignon Blanc
Vineyard: 0.75ha on the hillsides of Thésée. Planted between 1988 and 2007 on silex and white clay soils. Farming: Organic (certified by Ecocert)
Vinification: Grapes were hand-harvested, then directly pressed into fiberglass tanks for fermentation with indigenous yeasts. After fermentation the wine was matured in fiberglass tanks for 7 months. The wine is fined with a white clay from Montmorillon and goes through a tangential filtration before bottling. Minimal amounts of sulfur added as needed, during pressing and vatting.

Tasting note: This white wine is dry. Floral, fine and easy to drink from the moment it is bottled, this “spring” Sauvignon will become more refined from the first year: the nose becomes more lemony, and the aromas developed are those of pear and quince.
