The flagship wine from Colet since their start in 1992. Made of local Catalan varietes 60% Xarello and 40% Macabeu from certified organic estate vineyards grown on rocky calcareous soils in Sant Marti Sarocca and Pacs del Penedes. The grapes are destemmed, pressed gently with low 50% yields, fermented in stainless steel tanks of various sizes, followed by secondary fermentation in bottle, then aged on the lees for 30 months. Disgorged February 2025 with zero dosage.Â
