Tasting Notes: Vibrant and expressive, with
aromas of juicy black cherry, brambly spice,
and cola. The palate is bright and layered with
fresh Bing cherry, cassis, and a touch of earth,

The Gamay Noir was hand-
harvested and 100% destemmed to highlight the
purity of fruit and varietal expression.
Fermentation occurred in small stainless steel
fermenters using a mix of native and cultured
yeasts. Gentle pump overs were employed
during fermentation to promote balanced
extraction. Averaging 18 days on skins, the wine
was gently pressed and aged for 8 months in a
mix of concrete and stainless steel vessels,
where it underwent full malolactic
fermentation.
