Appellation: Coteaux Bourguignons
Location: The village of Molesme is located just 20km south of the border of the Côte des Bar, in the Côte d’Or region of Burgundy.
Variety: 90% Pinot Noir, 10% Gamay Viticulture: From 0.33ha in a vineyard called ‘La Grande Côte,’ planted on Oxfordian red marl at 400m elevation. Farming is organic. Vinification: Grapes are hand-harvested, then spontaneously fermented with 70% whole clusters in used barrels. The wine undergoes an 8 day maceration, followed by 9mo aging in stainless tank. The wine is bottled unfined and unfiltered, with a small dose of SO2 used only after harvest.
