The base of this wine is Ruben's popular Dore wine, which is 100% Chasselas Dore from 75-year-old, head-trained vines planted at 630m on decomposed granitic sandy soils in Cebreros, fermented with native yeasts in stainless steel with 6 days of maceration. In 2021, Ruben transferred some Dore into a sherry bota to ferment and age with no topping up. An initial saca of 300 bottles was drawn from the barrel in the spring of 2022, then re-filled with freshly-fermenting 2022 Dore in the fall. Saca contains 4 wines from 2021, 2022, 2023 & 2024 vintages. aged together in sherry bota and bottled Spring 2025. La Bota will become one of Ruben's legendary multi-vintage solera/perpetual cuvee wines, which is a tradition category in Gredos that he is revitalizing. 300 bottles produced.
