From “Les Raisses" , a vineyard on decomposed granite and schist in Lancié, which abut the vines of Fleurie. Planted over 50 years ago, and trained in the traditional gobelet fashion, the vines are farmed organic ally without use of synthetic treatments, herbicides, pesticides nor insecticides.
This cuvée is inspired by Daniel Sage’s méthode flottaison . Whole clusters were placed into a concrete tank before the remaining space was filled with unfermented direct-press juice.
After a nine-day maceration, the submerged clusters were separated from the now fermenting juice and pressed to their own tank for a fermentation by native yeasts. Nosulphur was added at fermentation, aging or bottling. The result is this cuvée, carbonic maceration, taken to its purest conclusion. Bottled unfined, unfiltered and with no added sulfites.
