There are no white grapes grown in El Hoyo de Pinares, so in order to make white wine, you have to look to the neighboring village of Cebreros for Albillo – if you can get your hands on some! Aurea is 100% Albillo Real from three small parcels, two of which are 70 years old and one 30 years old (0.8ha, 0.2ha, and 1.7ha respectively) planted on granitic sandy soils at 700 meters altitude. Grapes were harvested between August 4th and 8th, fermented with native yeasts in stainless steel with 23 days of maceration on the skins. After pressing, the wine was aged on the lees for 6 months in 500L used barrel and stainless steel. Bottled unfined and unfiltered. 20
