Seven Springs Vineyard is owned by Evening Land Vineyards. I am grateful to lease two blocks of non-irrigated Dijon clones (95 & 76) growing in volcanic basalt soils between 500’-550’ in the South Block. This portion of Seven Springs faces southeast and was planted in 2012. Seven Springs is farmed organically by Jessica Cortell’s Vitis Terra outfit.

Seth is crafting the closest approximation to Meursault the new world has to offer - powerful, chiseled, tightly wound with a dense core of crushed stone minerality and high acidity, subtle pear and green apple fruit, well integrated expensive oak, a very long mouthwatering finish. Let this warm up a bit before enjoying, these will really start to sing in 5-8 years and can be cellared for 15-20+ years.

farming/cellar: organic, dry farmed, Block B was hand-picked 9/7/21 and crushed into the press. Multiple press fractions were browned in cold steel for 24 hours before 45ppm sulfur addition. Block E was hand-picked 9/10/21, crushed into the press, and browned for 6 hours before 45ppm sulfur addition. Hard press was not sulfured. Ambient yeast fermentations began with pied de cuvee in warming steel. Lots were then transferred with solids to new, once fill and twice fill Damy puncheons. Both blocks completed primary and malolactic within four to eight weeks, and lees were not stirred. After one year in puncheon, a blend including each lot was made in steel of 50 Block B and 50% Block E, from 50% new, 26% once-filled and 24% twice-filled puncheons. After six months in steel, the 2021 Seven Springs will be bottled 2/28/23 under DIAM 10 cork. No fining or filtration.
