45% Grenache blanc (1977, limestone soils), 45% Clairette blanche (1990, yellow sand, near the village of Tavel), 10% Bourboulenc (2010, deep grey sand), varieties co-harvested, fermented in tank with wild yeasts, raised 7 months, malo completed, "I want a sapid wine with belle length." This has all the elements of a great southern white: savory, baked stone fruit with note of pith on the finish, lift and saline/steely intensity from the Clairette. Comes alive with food!
