Prince Edward County, Ontario, Canada
varietal: savagnin and chardonnay
The first three wines in the L'Imparfait (Hinterland Wine Co + Joe Beef collab) were such a hit we just had to bring in the fourth: La Pioche - a captivating semi-orange wine from ideal plots that share their map parallel with Burgundy, so that's the kind of cool climate we are dealing with.
Clean and sleek, nice salinity, underripe tree fruit (pear and green apple), chalky minerality, dry finish with gentle tannins.
style: orange-ish
14 day maceration for the Savagnin, the Chardonnay did not see skin contact and was sourced from Familia Ramirez vineyard, spontaneous fermentation in neutral oak, matured in neutral oak, unfined and unfiltered
pairing: raclette, lobster with drawn butter
