100% Fernão Pires. From 20 year old vines planted to .2ha of sandy soils in a vineyard called Amoreira da Gândara. The grapes are vineyard sorted and hand-harvested in mid-August. Maceration lasts for five days in stainless steel followed by three weeks of spontaneous fermentation in stainless steel without temperature control, which is completed in bottle. The wine spends the entire time on lees without stirring. Bottled in September, released November 2019. The final total residual sugar is 1.4 g/L; 10.6% alcohol. Unfined and unfiltered.
A must have for any of the Duckman's (now run by the daughter) cult-like following, or any pet nat fans in general! Aromatic, floral, crunchy and dry palate. Grab a bottle while you can and pair with an Adobo seasoned roasted chicken or perhaps some coconut-breaded shrimp.
