Sancerre is located in the Western Loire Valley winemaking region.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eVariety:\u003c\/strong\u003e Sauvignon Blanc Vineyard: This wine comes from a single parcel facing SSE on Buzançais and Kimmeridgien limestone (“terres blanches”). There is a deep topsoil with small limestone rocks above and clay below. The water retention of the clay causes berries to grow larger and take longer to ripen, therefore this parcel is always the latest to be harvested. The domaine farms a total of 15ha of vines organically, and all soils are worked manually.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eVinification:\u003c\/strong\u003e Grapes are direct-pressed in a pneumatic press, then kept in cold temperatures overnight to settle the solids (which are then pressed as well). The juice is then transferred via gravity to a stainless steel tank in the room below the press, where they ferment using indigenous yeasts for a long, slow fermentation. CO2 is used instead of SO2 to protect the fermenting juice. The wine ages 2 years on the lees in used barrels, then is lightly filtered before bottling.
