Pauline Broqua worked as a sommelier in Toulouse before moving to the countryside and pursuing viniculture. She studied under Nicolas Carmarans (check out his 'Josette' now in stock) before settling onto Domaine des Buis in 2018. This blend comes from clay / limestone soil from two plots: one surrounding Broqua’s house and the other up on a slightly elevated hill on a southern facing slope. 20 yo vines. Shorter macerations = fresher expressions and palatable tannic structure. Partial carbonic maceration rather than full carbonic = also fresh and approachable but without a bubble gum quality that full carbo. can lean towards.
