This wine from Eric Louis is named for his great-great-grandmother Pauline, who established the family's focus on quality wine production in the 1860s. 

estate plots of 25 year old vines, soil is silex and Kimmeridgian

Vineyards are planted on the south east side of the Sancerre hill, primarily in Thauveney, with some in Ménétréol sous Sancerre and Vinon. Soil composed of 1/2 chalky-clay and 1/2 flinty (silex) soils. Organic approach in the vineyard, no herbicide, grass-growing, hoeing, ploughing, disbudding, and green harvesting.

farming/cellar: certified sustainable with organic and biodynamic practices, harvested at night to preserve freshness, Immediately after having been harvested, the grapes are pressed slowly in order to extract all the aromatic power. Fermentation occurs via indigenous yeast in cooled stainless steel tanks and then the wine is matured slowly on its fine lees for four months. The wine is fined (bentonite / vegan) and lightly filtered. Total SO2 90mg/lminimal added so2,
