Strict protocol called “Regola della Valle d’Agno” which respects ancient native agriculture principles is followed. Vinification follows the same rule: the less intervention the better. From the grapevine to the bottle they want the wine to express the typicity of the terroir, the richness of the ground and to protect the origin of the wine.
You might remember Benedetta's Cab. Sauv. Pét-Nat we had in stock. Sadly she lost 90% of those grapes to hail. Such is the life of the winemaker, at the mercy of nature.
