The Cerasuolo di Vittoria is a deep ruby red color. It has aromas of dried cherry, chocolate, smoke, herb and spice. It gains some licorice notes with time in the glass. Soft round fruity medium bodied palate with a good dose of acidity. The wines gives off dried cherry, truffle and smoky flavors in the mouth. Long finish. Complex and worthy of a few more years in the cellar. 60% Nero d'Avola, 40% Frappato. Organic / practicing biodynamic.

Spontaneous fermentation on the skins occurs in concrete tanks with indigenous yeast. The wine ages in Slavonian oak botti for 18 months followed by one year in the bottle before release.
