Winemaker Vincent believes biodynamic farming allows true discovery of the unique flavors of the fruit, they're gently pressed juice is fermented with the grapes' own wild yeasts before aging for two full years. This is a serious, concentrated bubbly with a slightly pink hue, small bubbles, and a nose of ripe pear and river bank stone fruit whose flavors carry through on a lively palate, toasted nuts, aromas of white flowers, methode de champagnoise, fresh and elegant.
