Maurizio Donati of Casa Belfi is a biodynamic farmer and natural winemaker going boldly against the norm of typical Prosecco. Located in Valdobiaddene, Donati works by the biodynamic calendar and uses biodynamic preparations to ensure the presence of biodiversity and microorganisms in the vineyard.
a fun alternative to lambrusco. dry and refreshing with a very gentle bubble (more of a vinho verde amount of bubble). Tart red fruit, purple berries, licorice, bright mineral-accented finish.

farming & cellar: biodynamic, hand harvested, whole cluster carbonic maceration for 2 weeks, spontaneous fermentation in steel tanks, further 2 weeks of maceration to add a bit of structure and color, bottled before the fermentation is complete and a bit of frozen grape must is added to each bottle to help re-start the fermentation, unfined, unfiltered, no added sulfites.
