Since 2019, the site has been organically hand-farmed by myself. The fruit was hand-picked on August 15th, 2022. Grapes were then gently pressed (this bottling is 80 gallons per ton), oxidatively handled, and fermented with native yeasts in large-format French oak barrels. Malo-lactic fermentation was inhibited. The wine was assembled and hand-bottled in February of 2021, achieving 6 atmospheres of pressure without fining or filtration.
