2020 Palette Rose from the legendary Chateau Simone in Provence. Those who know this wine need little persuasion here, as this is among the most iconic pink wines in the world, evolving beautifully for many years in a good cellar and offering a singular complexity rare in any wine--much less in a rose. Built around Grenache and Mourvedre, but famously including such rarities as Picpoul Noir, Manosquin, and Castet--speaking to the diversity of Simone's 100+ year old plantings--it spends a full year aging in large foudres after a spontaneous fermentation in cement (outside yeasts have never been introduced at Simone, nor have pesticides and herbicides).
Produced purely via saignee, it is rich, vinous, and deep, but offers the delicate balance and robust acidity that is a signature of Simone's north-facing vineyards as interpreted by the Rougier family's gentle cellar hand.
