certified organic red blend from a single vineyard in the Languedoc. this is a brooding, structured red that requires an hour or more in a decanter.
Field blend with mostly Carignan; also Grenache, Syrah, Grenache Gris, Macabou, Terret
40% Carignan, 30% Grenache, 30% Cinsault (field blend that is co-picked and co-fermented). there is also a dash of old-vine white varietals sprinkled in the vineyard, adding to the magic. whole cluster, no sulfur added during vinification. some biodynamic practices utilized. sheep used in vineyards to control weeds and provide manure.
50-60 year old vines planted in limestone and schist with fissured rock
11 hectare plot
matured in old/neutral Burgundy barrels obtained from Chassagne Montrachet.
Tasting Notes: Deep purple, matured whole cluster, touch of leather, morello cherries, soft cacao, juicy tart, medium body, good grip on the finish
