Liten Buffel is a project by Zack Klug and Patrick Vaughn, making natural wines in US side of Niagara in New York state. They focus on low intervention wines that reflect a sense of place and time, and are minimalists in the cellar, and in the vineyard (tended with biodynamic practices).
-All the practices we love: spontaneous fermentation, whole cluster, 30% carbonic maceration, unfined, unfiltered, with no sulfites added. Just foot crushed grapes, settled in old wood for16 months and bottled by hand at the proper time.
-This Pinot Noir needs a few minutes to breath and then opens into this high-toned sensation of a Pinot, doing what it does best, giving stage to the terroir, the sense of place. Crunchy red cassis, wildflowers, forest floor, cedar, zingy acidity.
